Whole Wheat Insane Waffles

Why rely on processed freezer waffles when it is so easy to make you own at home? Make a batch of these delicious, whole grain waffles on the weekend and freeze for use during the week.

This recipe is adapted from this recipe from Food Network.

Ingredients:

  • 1 1/2 cups whole wheat flour or white-whole wheat flour
  • 1/2 cup cornstarch
  • 1 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1 tsp. salt
  • 3 tsp. sugar
  • 2 cups lowfat buttermilk
  • 2 eggs
  • 1/2 cup canola oil
  • 1 1/2 tsp. vanilla extract

In large bowl, whisk together flour, cornstarch, baking powder, baking soda, salt and sugar. Add buttermilk, eggs and canola oil, whisk until blended. Let batter rest for at least 10 minutes. While batter rests, heat up waffle iron. Cook waffles according to waffle iron instructions. Cool waffles on wire rack, place extras in freezer bag. Will keep in freezer for several months.
