4 4-ounce boneless, skinless chicken breasts
4 ounces reduced fat cream cheese, room temperature
1/4 cup grated Parmesan cheese
2-3 TBSP chopped fresh herbs, such as basil, thyme, parsley, chives (any combination)
black pepper to taste
1 clove fresh garlic, crushed
Put each chicken breast between 2 pieces of waxes paper or plastic wrap or in a plastic bag and pound thin with a flat mallet. In a bowl, mix together all remaining ingredients. Place 1/4 of cream cheese mixture on bottom half of each chicken breast and then roll up, starting at the cream cheese end. Secure roll with a toothpick or 2. Bake in preheated 375 degree oven for 15-20 minutes.
