- 2 cups cubed cooked chicken breast or leftover roast chicken
- 1 cup sliced grapes
- 1/2 cup diced apple
- 1/3 cup mayonnaise or to taste
- 1/4 tsp salt
Mix together all ingredients. Other ideas to add are 2 TBSP chopped walnuts or sliced almonds, substitute mango for some or all of the grapes or apples or add some chopped celery.
Serve as a sandwich on whole grain bread, as a wrap on a tortilla or serve in a container with some crackers.
