really like this salad though the spice could be toned down a bit. Tried making it at home but couldn't remember all the ingredients!

These are great ideas. It is important to remember that good nutrition is actually very simple. Eat whole, fresh foods and avoid processed foods.

Everytime I get a chance to go to TJ's, I pick up one of these salads. It is the best. Currently got red quinoa cooking on the stove, lovely greens and spicy chicken in the fridge, with dried mango to chop up on top. How do you make the coconut chili dressing???Anybody have ideas??

You can use real pumpkin (here's the directions for doing that: http://homecooking.about.com/od/vegetablerecipes/r/blv314.htm), but it is time consuming. I am a fan of using the easy method when it doesn't sacrifice flavor or nutrition and canned pumpkin meets both criteria. If you are using fresh, baked, pureed pumpkin, you would use 2 cups in this recipe. Enjoy!

This looks so delicious!

Can this be adapted for a fresh pumpkin? I'm making a pumpkin pie out of one left over pumpkin and the other one is just staring at me saying, "do something with me, too!"
I've never made anything from an actual pumpkin before, so I couldn't begin to fathom some kind of conversion rate for a can of pumpkin versus what's actually inside of a real one.
